The loss is the schedule, not the copper

A copper theft on a job site is rarely priced correctly by the people it happens to. The wire is a line item. The three weeks waiting on a replacement switchgear order, the trades stood down, the liquidated damages clause in the prime contract, that is the actual loss, and it is usually an order of magnitude larger than what was taken.

Which is why site security is cheap relative to what it protects, and why the coverage window that matters is the one around the material delivery, not the one that starts after the first theft.

What we log on a job site, and who reads it

Gate logs with vehicle and personnel entries, material-out authorizations against your list, randomized perimeter rounds with GPS checkpoints at the lay-down yard and the trailer line, and photographs of anything moved since the previous round.

That package is what your GC's risk manager, your insurer and, if it comes to it, the sheriff's office will ask for. An incident report that says “observed subject leaving area” and nothing else closes no claims. Ours carry times, locations, the officer's account, the gate-log entries for the window in question, and the checkpoint record showing where the officer was when it happened.

Fire watch is usually part of this job

Most job sites eventually need fire watch, not just security: a sprinkler system impaired during a tie-in, hot work under a permit, a standpipe out of service on a floor that is otherwise occupied. Those are logged obligations with their own format and their own frequency, and the fire marshal's office cares about the log, not the intent.
